Gingerbread Men
Makes around 15 men
Gluten, nut and dairy free
1/4 cup dairy free margarine
1/3 cup Golden Syrup
1/4 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon mixed spice
1 teaspoon cinnamon
1/2 teaspoon ginger
1 egg
2 cups GFG baking flour mix
1) Preheat oven to 180C.
2) Melt together margarine and golden syrup. Allow to cool down then add sugar, baking soda, allspice, cinnamon, ginger, egg and flour. Beat with a wooden spoon.
3) Place the dough on a floured board knead for a few minutes to blend well. Continue to add flour to the board to ensure the mixture is not too tacky and does not stick, though be very careful not to add to much as the mixture will be dry and tasteless when baked.
4) Using a floured rolling pin roll out until around 1/2cm thick.
5) Cut out shapes using cutters and place on a greased baking tray.
6) Cook for around 10 – 15 minutes or until golden brown. Leave to cool before icing.
